Corn and Black Bean Salsa with Lime Cilantro Vinaigrette

One of our favorite summer recipes made with fresh sweet corn and tomatoes. 
Served with tortilla chips.  Yum!

"Salad" Ingredients
1 c. steamed or grilled sweet corn
1 can black beans, drained and rinsed
1 large green pepper, diced
1 large red pepper, diced
1/2 large red onion, diced
1 small jalepeno, diced (without seeds)
1 medium tomato, diced


Dressing Ingredients
1/4 c. olive oil
1/2 c. fresh cilantro, finely chopped
1 TB cider vinegar
Juice of 2 limes
Lime zest from 1/2 lime
1 garlic glove, minced
1/2 tsp smoked paprika
1/2 tsp ground black pepper
1/4 tsp garlic salt
1/4 tsp chili powder

In a large bowl combine corn, black beans, peppers, onion, jalapeno and tomato.

In another bowl combine cilantro, vinegar, lime juice, zest, garlic and spices.

Quickly whisk as you drizzle in the oil.

Add dressing, toss and serve.
